Melon is cut into long strips and dried in the sun, then often braided. It is intensely sweet and floral in a way no other dried fruit is, and in Uzbekistan it is served with tea the way others serve biscuits.

Drying concentrates the melon's own sugars. Nothing is added — the intensity is simply what is left once the water has gone.
Melon holds its potassium and carotenoid content through drying, and the fibre concentrates along with the sugars.
Few origins produce it at export quality. For a buyer looking for something the shelf does not already have, that is the point.
